Mexican Taco Lasagna is the ultimate fusion of two beloved dishes, combining the rich, cheesy goodness of lasagna with the bold, savory flavors of tacos. This hearty casserole is layered with tortillas, seasoned beef, refried beans, and melted cheese for a satisfying meal that everyone will love. The added salsa and sour cream make it even more delicious and give it that signature taco taste.

  1. Ingredients:
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 8 small flour tortillas
  • 1 1/2 cups refried beans
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup chopped fresh cilantro (for garnish)

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the chopped onion and garlic to the beef and cook until softened, about 3 minutes.
  4. Stir in the taco seasoning and water, then add the diced tomatoes with green chilies. Simmer for 5 minutes until the mixture thickens.
  5. In a baking dish (9×13 inches), spread a thin layer of refried beans on the bottom.
  6. Place 4 flour tortillas on top of the beans, overlapping slightly to cover the bottom of the dish.
  7. Spread half of the beef mixture over the tortillas, then sprinkle with 1/3 of the shredded cheese.
  8. Repeat the layers: add another layer of tortillas, the remaining beef mixture, and another 1/3 of the cheese.
  9. Add the final layer of tortillas on top, and spread the sour cream over the top layer of tortillas.
  10. Sprinkle the remaining cheese over the sour cream and bake for 25-30 minutes until the cheese is melted and bubbly.
  11. Garnish with chopped green onions and cilantro before serving.
  12. Serve hot and enjoy your Mexican Taco Lasagna!
