Ingredients:
- 1 ½ cups warm water (110°F / 45°C)
- 1 packet (2 ¼ tsp) active dry yeast
- 1 teaspoon sugar
- 4 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon melted butter
- 8 mozzarella cheese sticks (or cut mozzarella into 3-inch sticks)
- 1/4 cup baking soda
- 6 cups water (for baking soda bath)
- 1 egg, beaten (for egg wash)
- Coarse salt, for sprinkling
Directions:
- In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
- Add flour, salt, and melted butter to the yeast mixture. Stir until a dough forms, then knead for about 5–7 minutes until smooth.
- Place dough in a lightly oiled bowl, cover, and let rise for 1 hour or until doubled in size.
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Punch down the dough and divide into 8 equal pieces.
- Roll each piece into a rope about 12–14 inches long. Flatten each rope slightly and place a mozzarella stick in the center. Seal the dough around the cheese and shape into a pretzel.
- In a large pot, bring 6 cups of water and baking soda to a boil. Carefully dip each pretzel into the solution for 20–30 seconds, then place on the prepared baking sheet.
- Brush with beaten egg and sprinkle with coarse salt.
- Bake for 12–15 minutes or until deep golden brown. Serve warm and enjoy the melty center!
