Ingredients:

  • 1 ½ cups warm water (110°F / 45°C)
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 teaspoon sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon melted butter
  • 8 mozzarella cheese sticks (or cut mozzarella into 3-inch sticks)
  • 1/4 cup baking soda
  • 6 cups water (for baking soda bath)
  • 1 egg, beaten (for egg wash)
  • Coarse salt, for sprinkling

Directions:

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
  2. Add flour, salt, and melted butter to the yeast mixture. Stir until a dough forms, then knead for about 5–7 minutes until smooth.
  3. Place dough in a lightly oiled bowl, cover, and let rise for 1 hour or until doubled in size.
  4. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  5. Punch down the dough and divide into 8 equal pieces.
  6. Roll each piece into a rope about 12–14 inches long. Flatten each rope slightly and place a mozzarella stick in the center. Seal the dough around the cheese and shape into a pretzel.
  7. In a large pot, bring 6 cups of water and baking soda to a boil. Carefully dip each pretzel into the solution for 20–30 seconds, then place on the prepared baking sheet.
  8. Brush with beaten egg and sprinkle with coarse salt.
  9. Bake for 12–15 minutes or until deep golden brown. Serve warm and enjoy the melty center!
