The New York Cheesecake is a dessert icon, known for its rich, creamy texture and subtle hint of vanilla. This recipe combines the perfect balance of tangy sour cream with smooth cream cheese, all nestled in a buttery graham cracker crust. Every bite delivers that signature dense yet silky mouthfeel that defines a true New York-style cheesecake.

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/4 cup sugar
  • 4 (8 oz) packages of cream cheese, softened
  • 1 1/4 cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 tablespoons flour
  • 1 tablespoon lemon juice

Directions:

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add 1 1/4 cups of sugar and continue mixing.
  4. Blend in the vanilla extract, lemon juice, and flour.
  5. Add the eggs one at a time, mixing after each addition until just combined.
  6. Stir in the sour cream, mixing just until blended.
  7. Pour the cream cheese mixture over the crust in the springform pan.
  8. Bake in the preheated oven for 55-60 minutes, or until the center is almost set.
  9. Turn off the oven and allow the cheesecake to cool inside with the door slightly open for 1 hour.
  10. Refrigerate for at least 4 hours or overnight before serving.
