Ingredients:

  • 1 cup butter
  • 1/2 cup brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 3 cups rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter

Directions:

  1. Melt butter in a medium saucepan over medium heat. Add brown sugar and vanilla, stirring until sugar is dissolved.
  2. Mix in the oats and cook for about 3 minutes, stirring continuously.
  3. Press half of the oat mixture into a greased 9×9 inch square pan.
  4. In a separate microwave-safe bowl, melt chocolate chips and peanut butter, stirring every 30 seconds until smooth.
  5. Pour the chocolate mixture over the crust in the pan, spreading evenly.
  6. Crumble the remaining oat mixture over the chocolate layer, gently pressing it down.
  7. Refrigerate for 2-3 hours or until set.
  8. Cut into bars and serve.
