Ingredients:
- 1 cup butter
- 1/2 cup brown sugar, packed
- 1 teaspoon pure vanilla extract
- 3 cups rolled oats
- 1 cup semi-sweet chocolate chips
- 1/2 cup peanut butter
Directions:
- Melt butter in a medium saucepan over medium heat. Add brown sugar and vanilla, stirring until sugar is dissolved.
- Mix in the oats and cook for about 3 minutes, stirring continuously.
- Press half of the oat mixture into a greased 9×9 inch square pan.
- In a separate microwave-safe bowl, melt chocolate chips and peanut butter, stirring every 30 seconds until smooth.
- Pour the chocolate mixture over the crust in the pan, spreading evenly.
- Crumble the remaining oat mixture over the chocolate layer, gently pressing it down.
- Refrigerate for 2-3 hours or until set.
- Cut into bars and serve.
