This No-Bake Woolworth Icebox Cheesecake is a perfect blend of simplicity and indulgence. - Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 cup sugar
- 8 oz cream cheese, softened
- 1 can (14 oz) sweetened condensed milk
- 1/4 cup lemon juice
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Directions:
- In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture is well combined.
- Press the graham cracker mixture firmly into the bottom of a 9-inch pie dish or a springform pan to form the crust. Place it in the refrigerator while you prepare the filling.
- In a separate large bowl, beat the softened cream cheese until smooth and creamy.
- Add the sweetened condensed milk, lemon juice, and vanilla extract to the cream cheese, and continue beating until fully combined and smooth.
- In a medium mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fully combined.
- Pour the filling over the graham cracker crust, smoothing it out into an even layer.
- Refrigerate the cheesecake for at least 4 hours, or overnight, to allow it to set.
- Once set, slice and serve. Optional: garnish with fresh berries or whipped cream before serving.
