This No-Bake Woolworth Icebox Cheesecake is a perfect blend of simplicity and indulgence.   1. Ingredients:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup sugar
  • 8 oz cream cheese, softened
  • 1 can (14 oz) sweetened condensed milk
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Directions:

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture is well combined.
  2. Press the graham cracker mixture firmly into the bottom of a 9-inch pie dish or a springform pan to form the crust. Place it in the refrigerator while you prepare the filling.
  3. In a separate large bowl, beat the softened cream cheese until smooth and creamy.
  4. Add the sweetened condensed milk, lemon juice, and vanilla extract to the cream cheese, and continue beating until fully combined and smooth.
  5. In a medium mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until smooth and fully combined.
  7. Pour the filling over the graham cracker crust, smoothing it out into an even layer.
  8. Refrigerate the cheesecake for at least 4 hours, or overnight, to allow it to set.
  9. Once set, slice and serve. Optional: garnish with fresh berries or whipped cream before serving.
