This One Pot Mexican Rice Casserole is the ultimate comfort food, with its cheesy, flavorful layers and hearty rice. The perfect balance of spiced beef, tender rice, and melty cheese creates a satisfying meal that’s sure to please the whole family.
- Ingredients:
- 1 lb ground beef or turkey
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (8 oz) tomato sauce
- 2 cups beef or chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup chopped cilantro (optional)
- Salt to taste
Directions:
- In a large skillet or pot, brown the ground beef or turkey over medium heat. Drain excess fat if needed.
- Add the chopped onion, bell pepper, and garlic to the skillet, cooking until softened, about 3-4 minutes.
- Stir in the rice, diced tomatoes, tomato sauce, beef or chicken broth, cumin, chili powder, paprika, black pepper, and salt.
- Bring the mixture to a simmer, then cover and cook over low heat for 20-25 minutes, until the rice is tender and has absorbed most of the liquid.
- Once the rice is cooked, sprinkle the shredded cheddar cheese over the top and cover to melt for 2-3 minutes.
- Garnish with chopped cilantro (optional) before serving.
