Ingredients:

  • 1 tablespoon olive oil
  • 14 oz smoked sausage, sliced into rounds
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz pasta (penne, rotini, or elbow)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley (optional)

Directions:

  1. In a large skillet or Dutch oven, heat olive oil over medium heat. Add sliced smoked sausage and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same pan, add onion and cook until translucent, about 2–3 minutes. Add garlic and sauté for another 30 seconds.
  3. Return sausage to the pot. Pour in chicken broth and heavy cream. Bring to a simmer.
  4. Stir in pasta, paprika, and black pepper. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is cooked and sauce is thickened.
  5. Stir in shredded cheddar cheese until melted and creamy.
  6. Garnish with parsley and serve hot.
