Ingredients:
- 1 tablespoon olive oil
- 14 oz smoked sausage, sliced into rounds
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 8 oz pasta (penne, rotini, or elbow)
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- 1 ½ cups shredded cheddar cheese
- 2 tablespoons chopped fresh parsley (optional)
Directions:
- In a large skillet or Dutch oven, heat olive oil over medium heat. Add sliced smoked sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same pan, add onion and cook until translucent, about 2–3 minutes. Add garlic and sauté for another 30 seconds.
- Return sausage to the pot. Pour in chicken broth and heavy cream. Bring to a simmer.
- Stir in pasta, paprika, and black pepper. Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is cooked and sauce is thickened.
- Stir in shredded cheddar cheese until melted and creamy.
