Ingredients:

  • 1 lb boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup uncooked long grain white rice
  • 2 1/4 cups chicken broth
  • 1/2 cup BBQ sauce
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley or green onions for garnish

Directions:

  1. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and smoked paprika, and sauté until browned on all sides (about 5–6 minutes).
  2. Add onion and garlic, cook for another 2 minutes until fragrant and softened.
  3. Stir in rice, chicken broth, BBQ sauce, and honey. Bring to a simmer.
  4. Reduce heat to low, cover, and cook for 18–20 minutes, or until the rice is tender and liquid is absorbed.
  5. If desired, sprinkle with shredded cheddar cheese, cover for 2 more minutes until melted.
  6. Garnish with fresh parsley or green onions. Serve hot and enjoy!
