Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened

- 2 cups powdered sugar
- 2 cups Rice Krispies cereal

Directions:
- In a large bowl, mix peanut butter, softened butter, and vanilla extract until smooth and creamy.
- Gradually add powdered sugar, mixing until fully incorporated.
- Gently fold in the Rice Krispies cereal, being careful not to crush the cereal.
- Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
- Chill the peanut butter balls in the refrigerator for about 30 minutes, or until firm.
- In a microwave-safe bowl, melt the chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each until fully melted and smooth.
- Dip each peanut butter ball into the melted chocolate, ensuring it is fully coated. Place them back on the parchment paper to set.
- Allow the chocolate to harden at room temperature, or speed up the process by placing the tray in the refrigerator.
