These Pecan Pie Cookies combine the rich, buttery flavour of pecan pie with the convenience of a cookie. The slightly chewy centre is sweet and gooey, topped with crunchy pecans, creating the perfect balance of textures and flavours.

  1. Ingredients:
    • 1 cup unsalted butter, softened
    • 3/4 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 1/2 cups all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/2 cup chopped pecans
    • 1/2 cup brown sugar, packed
    • 1/4 cup corn syrup
    • 1 tablespoon unsalted butter, melted

Directions:

  1. Preheat your oven to 180°C (160°C fan)/350°F and line a baking tray with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  4. Stir in the chopped pecans.
  5. Scoop tablespoon-sized portions of the cookie dough and place them onto the prepared baking tray, spacing them about 2 inches apart.
  6. In a small bowl, combine the brown sugar, corn syrup, and melted butter. Spoon a small amount of the pecan mixture onto the centre of each cookie.
  7. Bake for 10-12 minutes, or until the cookies are golden around the edges. Let them cool on the tray for a few minutes before transferring to a wire rack to cool completely.
