These Pecan Pie Cookies combine the rich, buttery flavour of pecan pie with the convenience of a cookie. The slightly chewy centre is sweet and gooey, topped with crunchy pecans, creating the perfect balance of textures and flavours.
- Ingredients:
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped pecans
- 1/2 cup brown sugar, packed
- 1/4 cup corn syrup
- 1 tablespoon unsalted butter, melted
Directions:
- Preheat your oven to 180°C (160°C fan)/350°F and line a baking tray with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Stir in the chopped pecans.
- Scoop tablespoon-sized portions of the cookie dough and place them onto the prepared baking tray, spacing them about 2 inches apart.
- In a small bowl, combine the brown sugar, corn syrup, and melted butter. Spoon a small amount of the pecan mixture onto the centre of each cookie.
- Bake for 10-12 minutes, or until the cookies are golden around the edges. Let them cool on the tray for a few minutes before transferring to a wire rack to cool completely.
