Ingredients:

For the Steak Fries:

  • 4 large russet potatoes, washed and cut into thick fries

  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste

Instructions:

1. Prepare the Steak Fries:

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, toss the cut potatoes with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.
  • Spread the fries in a single layer on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy.

2. Cook the Steak:

  • While the fries are baking, heat olive oil in a large skillet over medium-high heat.

  • Continue to cook, whisking constantly, until the mixture thickens, about 3-5 minutes.
  • Reduce the heat to low and slowly add the shredded cheddar and mozzarella cheeses, stirring until melted and smooth.
  • Season with garlic powder, cayenne pepper (if using), and salt and pepper to taste.

4. Assemble:

  • Place the baked steak fries on a serving platter or individual plates.
  • Top the fries with the cooked steak, onions, and bell peppers.
  • Drizzle generously with the cheesy queso sauce.
