Ingredients:
For the Steak Fries:
- 4 large russet potatoes, washed and cut into thick fries
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
For the Steak:
- 1 pound ribeye steak, thinly sliced
- 1 tablespoon olive oil
- 1 medium onion, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
For the Cheesy Queso:
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup half-and-half or whole milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
Instructions:
1. Prepare the Steak Fries:
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cut potatoes with olive oil, salt, black pepper, garlic powder, and paprika until evenly coated.
- Spread the fries in a single layer on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until the fries are golden brown and crispy.
2. Cook the Steak:
- While the fries are baking, heat olive oil in a large skillet over medium-high heat.
- Add the sliced onions and bell peppers, and cook until they start to soften, about 5-7 minutes.
- Add the thinly sliced ribeye steak to the skillet, season with salt, black pepper, and garlic powder.
- Cook, stirring frequently, until the steak is browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
3. Prepare the Cheesy Queso:
- In a medium saucepan, melt the butter over medium heat.
- Stir in the flour and cook for 1-2 minutes to create a roux.
- Gradually whisk in the half-and-half or milk, ensuring there are no lumps.
- Continue to cook, whisking constantly, until the mixture thickens, about 3-5 minutes.
- Reduce the heat to low and slowly add the shredded cheddar and mozzarella cheeses, stirring until melted and smooth.
- Season with garlic powder, cayenne pepper (if using), and salt and pepper to taste.
4. Assemble:
- Place the baked steak fries on a serving platter or individual plates.
- Top the fries with the cooked steak, onions, and bell peppers.
- Drizzle generously with the cheesy queso sauce.
5. Serve:
