Ingredients:
- 3 lbs boneless ribeye roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh rosemary, chopped
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C).
- Rub the ribeye roast with olive oil, and then coat evenly with minced garlic, thyme, and rosemary. Season generously with salt and pepper.
- Place the roast in a roasting pan and cook for about 1 hour and 20 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
