This Ricotta Spinach Quiche is the ideal dish for brunch or a light dinner. The creamy ricotta cheese pairs perfectly with the spinach, while the combination of eggs and Parmesan creates a rich, satisfying texture. Ingredients:
- 1 pre-made pie crust (or homemade)
- 1 tablespoon olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 3 large eggs
- 1/2 cup heavy cream
- 1/4 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese
Directions:
- Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish and set aside.
- Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for 3-4 minutes, until softened.
- Add the chopped spinach to the skillet and cook for another 3-4 minutes, until wilted. Remove from heat and set aside to cool.
- In a large bowl, whisk together the ricotta cheese, Parmesan cheese, eggs, heavy cream, nutmeg, salt, and pepper until smooth.
- Stir in the cooked spinach mixture and shredded mozzarella cheese.
- Pour the quiche mixture into the prepared pie crust and spread evenly.
- Bake for 35-40 minutes, or until the center is set and lightly golden. Let the quiche cool for a few minutes before slicing and serving.
