These Roasted Brussels Sprouts are wonderfully crispy on the outside while remaining tender on the inside, offering a delightful contrast in texture. The garlic and lemon zest infuse the sprouts with vibrant, zesty flavours, while the Parmesan adds a touch of savoury richness, making them the perfect side dish.

  1. Ingredients:
    • 500g Brussels sprouts, trimmed and halved
    • 2 tablespoons olive oil
    • 2 garlic cloves, minced
    • Zest of 1 lemon
    • 1 tablespoon fresh lemon juice
    • Salt and pepper to taste
    • 1 tablespoon grated Parmesan cheese (optional)

Directions:

  1. Preheat your oven to 200°C (180°C fan)/400°F and line a baking tray with parchment paper.
  2. Trim the Brussels sprouts, removing any outer leaves, and cut them in half.
  3. In a large bowl, toss the halved Brussels sprouts with olive oil, minced garlic, lemon zest, salt, and pepper, ensuring they are well coated.
  4. Spread the Brussels sprouts in a single layer on the prepared baking tray.
  5. Roast in the preheated oven for 25-30 minutes, or until the Brussels sprouts are golden brown and crispy, tossing halfway through to ensure even cooking.
  6. Once roasted, drizzle with fresh lemon juice and sprinkle with grated Parmesan cheese, if using. Serve immediately.
