These Roasted Brussels Sprouts are wonderfully crispy on the outside while remaining tender on the inside, offering a delightful contrast in texture. - Ingredients:
- 500g Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- Zest of 1 lemon
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- 1 tablespoon grated Parmesan cheese (optional)
Directions:
- Preheat your oven to 200°C (180°C fan)/400°F and line a baking tray with parchment paper.
- Trim the Brussels sprouts, removing any outer leaves, and cut them in half.
- In a large bowl, toss the halved Brussels sprouts with olive oil, minced garlic, lemon zest, salt, and pepper, ensuring they are well coated.
- Spread the Brussels sprouts in a single layer on the prepared baking tray.
- Roast in the preheated oven for 25-30 minutes, or until the Brussels sprouts are golden brown and crispy, tossing halfway through to ensure even cooking.
- Once roasted, drizzle with fresh lemon juice and sprinkle with grated Parmesan cheese, if using. Serve immediately.
