  1. Sautéed Asparagus & Mushrooms

Ingredients:

  • 1 lb asparagus, trimmed and cut into 2-inch pieces
  • 8 oz mushrooms, sliced (such as cremini or button)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Directions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  3. Add the sliced mushrooms to the skillet and cook for 3-4 minutes, stirring occasionally, until they start to soften.
  4. Add the asparagus pieces and season with salt and pepper. Sauté for an additional 5-7 minutes, or until the asparagus is tender but still crisp.
  5. If using, drizzle the balsamic vinegar over the vegetables and toss to combine.
  6. Remove from heat and sprinkle with grated Parmesan cheese and fresh parsley before serving.
