- Sautéed Asparagus & Mushrooms
Ingredients:
- 1 lb asparagus, trimmed and cut into 2-inch pieces
- 8 oz mushrooms, sliced (such as cremini or button)
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- Fresh parsley for garnish
Directions:
- Heat olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute, or until fragrant.
- Add the sliced mushrooms to the skillet and cook for 3-4 minutes, stirring occasionally, until they start to soften.
- Add the asparagus pieces and season with salt and pepper. Sauté for an additional 5-7 minutes, or until the asparagus is tender but still crisp.
- If using, drizzle the balsamic vinegar over the vegetables and toss to combine.
- Remove from heat and sprinkle with grated Parmesan cheese and fresh parsley before serving.
