Ingredients:
- 8 slices of sourdough bread
- 2 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 8 slices of brie cheese (or your favorite cheese)
- 2 tablespoons butter, softened
Directions:
- Prepare the Blueberry Filling: In a small saucepan over medium heat, combine the blueberries, lemon juice, and honey. Cook, stirring occasionally, until the blueberries start to break down and the mixture thickens, about 5-7 minutes. Remove from heat and set aside.
- Assemble the Sandwiches: Lay out 4 slices of sourdough bread on a clean surface. Place 2 slices of brie cheese on each slice of bread. Spoon the blueberry mixture evenly over the cheese slices. Top with the remaining slices of bread to form sandwiches.
- Grill the Sandwiches: Heat a skillet or griddle over medium heat. Spread a thin layer of softened butter on the outside of each sandwich. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
