Ingredients:

  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 large onion, sliced
  • 1 can (15 oz) kidney beans, drained
  • 1 can (10.75 oz) condensed tomato soup
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef. Season with salt and pepper. Drain excess fat.
  3. In a greased baking dish, layer half of the sliced potatoes, followed by half of the onion slices and half of the browned beef. Repeat the layers.
  4. Spread the kidney beans over the top.
  5. Pour the condensed tomato soup evenly over the beans.
  6. Cover with aluminum foil and bake for 1 hour.
  7. Uncover, sprinkle with shredded cheese, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
