This Shrimp Fried Rice combines tender shrimp with savory vegetables and perfectly seasoned rice, creating a delicious and satisfying dish. Ingredients:

  • 1 lb medium shrimp, peeled and deveined
  • 3 cups cooked rice (preferably cold)
  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 1/2 cup frozen peas and carrots
  • 2 eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 2 teaspoons sesame oil
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Directions:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.
  2. In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion, peas, and carrots, and sauté for 3-4 minutes, until the vegetables are softened.
  3. Push the vegetables to one side of the skillet, then pour the beaten eggs into the empty side. Scramble the eggs until fully cooked and then mix with the vegetables.
  4. Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables and eggs.
  5. Add the soy sauce, oyster sauce (if using), and sesame oil to the rice mixture. Stir to coat the rice evenly with the sauce.
  6. Add the cooked shrimp back into the skillet and toss everything together. Season with salt and pepper to taste.
  7. Garnish with sliced green onions before serving. Serve warm and enjoy!
