This Shrimp Fried Rice combines tender shrimp with savory vegetables and perfectly seasoned rice, creating a delicious and satisfying dish. Ingredients:
- 1 lb medium shrimp, peeled and deveined
- 3 cups cooked rice (preferably cold)
- 2 tablespoons vegetable oil
- 1 small onion, diced
- 1/2 cup frozen peas and carrots
- 2 eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 2 teaspoons sesame oil
- 2 cloves garlic, minced
- 2 green onions, sliced (for garnish)
- Salt and pepper to taste
Directions:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the pan and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the diced onion, peas, and carrots, and sauté for 3-4 minutes, until the vegetables are softened.
- Push the vegetables to one side of the skillet, then pour the beaten eggs into the empty side. Scramble the eggs until fully cooked and then mix with the vegetables.
- Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables and eggs.
- Add the soy sauce, oyster sauce (if using), and sesame oil to the rice mixture. Stir to coat the rice evenly with the sauce.
- Add the cooked shrimp back into the skillet and toss everything together. Season with salt and pepper to taste.
- Garnish with sliced green onions before serving. Serve warm and enjoy!
