Ingredients:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 2 teaspoons ground cinnamon
  • 2 tablespoons brown sugar

Directions:

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the milk and sour cream, until just combined.
  5. In a small bowl, mix together the cinnamon and brown sugar.
  6. Fill each muffin cup halfway with batter, sprinkle some cinnamon-brown sugar mixture, then cover with the remaining batter.
  7. Top each muffin with a sprinkle of the cinnamon-brown sugar mixture.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
