Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1/4 cup sour cream
- 2 teaspoons ground cinnamon
- 2 tablespoons brown sugar
Directions:
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually mix in the dry ingredients, alternating with the milk and sour cream, until just combined.
- In a small bowl, mix together the cinnamon and brown sugar.
- Fill each muffin cup halfway with batter, sprinkle some cinnamon-brown sugar mixture, then cover with the remaining batter.
- Top each muffin with a sprinkle of the cinnamon-brown sugar mixture.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
