Steak & Cheese Quesadillas are the kind of meal that brings people to the table fast. The smell of seasoned steak searing in the pan, mixed with buttery tortillas and loads of melted cheese, is pure comfort food magic.

These quesadillas are endlessly customizable—add mushrooms, jalapeños, or swap in different cheeses. Serve with salsa, sour cream, or guacamole for dipping and you’ve got a crowd-pleasing dinner that’s ready in 30 minutes or less.

Ingredients:

  • 1 lb flank steak or sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 1 ½ cups shredded Mexican cheese blend (or cheddar & Monterey Jack)
  • 4 large flour tortillas
  • 1 tablespoon butter (for grilling)
  • Optional: sour cream, salsa, or guacamole for serving

Directions:

  1. In a skillet over medium-high heat, add olive oil. Sauté steak slices with chili powder, garlic powder, salt, and pepper. Cook for 4–5 minutes or until browned and cooked through. Remove and set aside.
  2. In the same skillet, sauté bell peppers and onion until soft and slightly caramelized, about 5 minutes.
  3. Heat a large non-stick skillet or griddle over medium heat. Butter one side of each tortilla.
  4. On the unbuttered side, layer cheese, steak, and veggies. Top with more cheese and another tortilla, buttered side out.
  5. Cook 2–3 minutes per side, pressing lightly, until tortillas are golden brown and cheese is melted.
  6. Slice into wedges and serve hot with your favorite dips.
