Ingredients:

- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup diced strawberries
For the French Toast:
- 8 slices thick-cut bread
- 4 large eggs
- 1 cup milk
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Butter, for frying
For Serving:
- Maple syrup
- Additional diced strawberries
- Optional: Powdered sugar
Instructions:
- Prepare the Filling: Beat the softened cream cheese until smooth. Mix in the powdered sugar and vanilla extract, then gently fold in the diced strawberries.
- Make the Batter: In a shallow dish, whisk together eggs, milk, vanilla extract, and ground cinnamon.
- Assemble: Spread the cheesecake filling evenly over 4 slices of bread. Top with the remaining slices to form sandwiches.
- Cook: Heat butter in a skillet over medium heat. Dip each sandwich in the batter, ensuring both sides are well coated. Fry until each side is golden brown, about 3-4 minutes per side.
- Serve: Drizzle with maple syrup, add additional diced strawberries, and sprinkle powdered sugar if desired.
