Ingredients:

For the Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup diced strawberries

For the French Toast:

  • 8 slices thick-cut bread
  • 4 large eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Butter, for frying

  • Maple syrup
  • Additional diced strawberries

Instructions:

  1. Prepare the Filling: Beat the softened cream cheese until smooth. Mix in the powdered sugar and vanilla extract, then gently fold in the diced strawberries.
  2. Make the Batter: In a shallow dish, whisk together eggs, milk, vanilla extract, and ground cinnamon.
  3. Assemble: Spread the cheesecake filling evenly over 4 slices of bread. Top with the remaining slices to form sandwiches.
  4. Cook: Heat butter in a skillet over medium heat. Dip each sandwich in the batter, ensuring both sides are well coated. Fry until each side is golden brown, about 3-4 minutes per side.
  5. Serve: Drizzle with maple syrup, add additional diced strawberries, and sprinkle powdered sugar if desired.
