These Strawberry Frosted Brownies are a perfect fusion of rich, fudgy chocolate and sweet, creamy strawberry goodness. The smooth, pink strawberry frosting creates a delightful contrast to the deep, dark chocolate of the brownies, making each bite a treat for your tastebuds.

  1. Ingredients:

For the Brownies:

  • 200g dark chocolate
  • 115g unsalted butter
  • 200g caster sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 100g plain flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

For the Strawberry Frosting:

  • 150g fresh strawberries, hulled and pureed
  • 100g unsalted butter, softened
  • 200g icing sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons heavy cream (if needed for consistency)

Directions:

  1. Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line a square baking tin (8×8 inches).
  2. In a heatproof bowl, melt the dark chocolate and butter together over a saucepan of simmering water, stirring occasionally until smooth. Alternatively, you can microwave it in short bursts.
  3. Once melted, remove from heat and stir in the caster sugar. Let it cool slightly before whisking in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.
  4. Sift together the flour, salt, and baking powder. Gradually fold the dry ingredients into the wet mixture until combined.
  5. Pour the brownie batter into the prepared tin and smooth the surface. Bake for 20-25 minutes, or until a skewer inserted into the centre comes out with a few moist crumbs attached.
  6. Let the brownies cool completely in the tin before frosting.

For the Strawberry Frosting:

  1. In a bowl, beat the softened butter until creamy.
  2. Gradually sift in the icing sugar, adding it slowly while mixing until smooth and fluffy.
  3. Stir in the pureed strawberries and vanilla extract. If the frosting is too thick, add 1-2 tablespoons of heavy cream to reach a spreadable consistency.
  4. Once the brownies have cooled, spread the strawberry frosting evenly over the top.
  5. Slice into squares and serve.
