These Strawberry Frosted Brownies are a perfect fusion of rich, fudgy chocolate and sweet, creamy strawberry goodness. The smooth, pink strawberry frosting creates a delightful contrast to the deep, dark chocolate of the brownies, making each bite a treat for your tastebuds.
- Ingredients:
For the Brownies:
- 200g dark chocolate
- 115g unsalted butter
- 200g caster sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 100g plain flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
For the Strawberry Frosting:
- 150g fresh strawberries, hulled and pureed
- 100g unsalted butter, softened
- 200g icing sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons heavy cream (if needed for consistency)
Directions:
- Preheat your oven to 180°C (160°C fan) or 350°F. Grease and line a square baking tin (8×8 inches).
- In a heatproof bowl, melt the dark chocolate and butter together over a saucepan of simmering water, stirring occasionally until smooth. Alternatively, you can microwave it in short bursts.
- Once melted, remove from heat and stir in the caster sugar. Let it cool slightly before whisking in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Stir in the vanilla extract.
- Sift together the flour, salt, and baking powder. Gradually fold the dry ingredients into the wet mixture until combined.
- Pour the brownie batter into the prepared tin and smooth the surface. Bake for 20-25 minutes, or until a skewer inserted into the centre comes out with a few moist crumbs attached.
- Let the brownies cool completely in the tin before frosting.
For the Strawberry Frosting:
- In a bowl, beat the softened butter until creamy.
- Gradually sift in the icing sugar, adding it slowly while mixing until smooth and fluffy.
- Stir in the pureed strawberries and vanilla extract. If the frosting is too thick, add 1-2 tablespoons of heavy cream to reach a spreadable consistency.
- Once the brownies have cooled, spread the strawberry frosting evenly over the top.
- Slice into squares and serve.
