Ingredients:

  • Cookie Crust:
    • 20 Strawberry Shortcake Oreo Cookies
    • 3 Tbsp unsalted butter, melted
  • Strawberry Cheesecake Filling:
    • 12 large strawberries
    • 16 oz. cream cheese, softened
    • 1/2 cup granulated sugar
    • 2 Tbsp all-purpose flour
    • 1/4 tsp salt
    • 1 tsp vanilla extract
    • 2 large eggs
    • 12 Strawberry Shortcake Oreo Cookies, divided
Directions:
  • Preheat oven to 325°F (163°C) and line an 8-inch square baking pan with aluminum foil, overhanging on two sides. Lightly coat with cooking spray.
  • Blend 20 Oreo Cookies into crumbs, mix with melted butter, and press into the baking pan. Bake for 10 minutes.
  • Puree strawberries. Beat cream cheese, sugar, flour, salt, vanilla, and eggs until smooth. Mix in strawberry puree.
  • Pour batter over crust, crumble 8 Oreo Cookies on top, and bake for 35-40 minutes.
  • Cool completely, chill for two hours, crumble remaining cookies on top, and serve.
