Ingredients:
- Cookie Crust:
- 20 Strawberry Shortcake Oreo Cookies
- 3 Tbsp unsalted butter, melted
- Strawberry Cheesecake Filling:
- 12 large strawberries
- 16 oz. cream cheese, softened
- 1/2 cup granulated sugar
- 2 Tbsp all-purpose flour
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 large eggs
- 12 Strawberry Shortcake Oreo Cookies, divided
- Preheat oven to 325°F (163°C) and line an 8-inch square baking pan with aluminum foil, overhanging on two sides. Lightly coat with cooking spray.
- Blend 20 Oreo Cookies into crumbs, mix with melted butter, and press into the baking pan. Bake for 10 minutes.
- Puree strawberries. Beat cream cheese, sugar, flour, salt, vanilla, and eggs until smooth. Mix in strawberry puree.
- Pour batter over crust, crumble 8 Oreo Cookies on top, and bake for 35-40 minutes.
- Cool completely, chill for two hours, crumble remaining cookies on top, and serve.
