Ingredients:
For the Dough:
- 3 cups all-purpose flour
- 1 packet (2 1/4 tsp) instant yeast
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup whole milk, warmed
- 1/4 cup unsalted butter, melted
- 2 large eggs
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
For the Strawberry Filling:
- 1 1/2 cups diced strawberries
- 1 tablespoon granulated sugar
- 1 teaspoon lemon juice
For the Shortcake Crumble:
- 1/2 cup all-purpose flour
- 1/4 cup sugar
- 1/4 cup freeze-dried strawberries, crushed
- 1/4 cup cold unsalted butter, cubed
For the Glaze (Optional):
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Directions:
- In a large bowl, combine flour, yeast, sugar, and salt. Add warm milk, melted butter, and eggs. Mix and knead until a smooth dough forms, about 8–10 minutes. Cover and let rise for 1 hour or until doubled in size.
- In a small bowl, mix cream cheese, powdered sugar, and vanilla until smooth. Set aside.
- Toss diced strawberries with sugar and lemon juice. Let sit for 10 minutes. Drain excess liquid.
- Roll dough into a large rectangle (about 12×16 inches). Spread cheesecake filling evenly, then top with strawberries.
- Roll tightly from the long edge and cut into 12 rolls. Place in a greased 9×13 baking dish. Cover and let rise for another 30–45 minutes.
- Meanwhile, make the crumble: Mix flour, sugar, and crushed freeze-dried strawberries. Cut in butter with a fork until crumbly.
- Preheat oven to 350°F (175°C). Sprinkle crumble over rolls and bake for 25–30 minutes or until golden.
- Whisk glaze ingredients and drizzle over slightly cooled rolls. Serve warm or at room temperature.
