Taco Stuffed Shells bring together the best of both worlds: a comforting, cheesy pasta dish with the bold and flavorful taste of tacos. Each jumbo shell is generously stuffed with seasoned ground beef and topped with a melty layer of cheese. The fresh garnishes of tomatoes, green onions, and cilantro add the perfect finishing touch to this hearty meal.

Ingredients:

  • 12 jumbo pasta shells
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup chopped green onions
  • 1/2 cup diced tomatoes
  • Fresh cilantro, chopped (optional)

Directions:

  1. Preheat the oven to 375°F (190°C). Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions, drain, and set aside.
  2. While the pasta shells cook, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
  3. Stir in the taco seasoning and salsa. Let the mixture simmer for 5-7 minutes until thickened and combined.
  4. In a small bowl, mix together the sour cream, 1 cup of cheddar cheese, and 1 cup of mozzarella cheese.
  5. Once the pasta shells have cooled slightly, stuff each shell with the taco beef mixture and place them in a greased 9×13-inch baking dish.
  6. Top the stuffed shells with the cheese mixture, then sprinkle with the remaining cheddar and mozzarella cheeses.
  7. Bake the stuffed shells for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Garnish with diced tomatoes, green onions, and fresh cilantro before serving.
