Taco Stuffed Shells bring together the best of both worlds: a comforting, cheesy pasta dish with the bold and flavorful taste of tacos. Each jumbo shell is generously stuffed with seasoned ground beef and topped with a melty layer of cheese. The fresh garnishes of tomatoes, green onions, and cilantro add the perfect finishing touch to this hearty meal.
Ingredients:
- 12 jumbo pasta shells
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup sour cream
- 1 ½ cups shredded cheddar cheese
- 1 ½ cups shredded mozzarella cheese
- ½ cup chopped green onions
- 1/2 cup diced tomatoes
- Fresh cilantro, chopped (optional)
Directions:
- Preheat the oven to 375°F (190°C). Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions, drain, and set aside.
- While the pasta shells cook, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
- Stir in the taco seasoning and salsa. Let the mixture simmer for 5-7 minutes until thickened and combined.
- In a small bowl, mix together the sour cream, 1 cup of cheddar cheese, and 1 cup of mozzarella cheese.
- Once the pasta shells have cooled slightly, stuff each shell with the taco beef mixture and place them in a greased 9×13-inch baking dish.
- Top the stuffed shells with the cheese mixture, then sprinkle with the remaining cheddar and mozzarella cheeses.
- Bake the stuffed shells for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with diced tomatoes, green onions, and fresh cilantro before serving.
