Ingredients:

  • 4 large onions
  • 1/4 cup olive oil
  • 2 tbsp brown sugar
  • 2 tbsp balsamic vinegar
  • 1 tsp dried thyme

  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped (for garnish)

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Peel the onions and slice them into 1/2-inch rings.
  3. In a large bowl, combine olive oil, brown sugar, balsamic vinegar, dried thyme, smoked paprika, salt, and pepper.
  4. Add the onion rings to the bowl and toss to coat evenly with the mixture.
  5. Arrange the onions in a single layer on a baking sheet.
  6. Sprinkle minced garlic over the onions.
  7. Roast in the oven for 25-30 minutes, or until the onions are tender and caramelized.
  8. Remove from the oven and garnish with fresh parsley before serving.
