Ingredients:
- 4 large onions
- 1/4 cup olive oil
- 2 tbsp brown sugar
- 2 tbsp balsamic vinegar
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped (for garnish)
Directions:
- Preheat oven to 375°F (190°C).
- Peel the onions and slice them into 1/2-inch rings.
- In a large bowl, combine olive oil, brown sugar, balsamic vinegar, dried thyme, smoked paprika, salt, and pepper.
- Add the onion rings to the bowl and toss to coat evenly with the mixture.
- Arrange the onions in a single layer on a baking sheet.
- Sprinkle minced garlic over the onions.
- Roast in the oven for 25-30 minutes, or until the onions are tender and caramelized.
- Remove from the oven and garnish with fresh parsley before serving.
