The Golden Pineapple Delight is not just a dessert, it’s an experience. Ingredients:
1/2 cup real, unsalted butter
1 and 1/3 cup packed brown sugar
3 and 1/2 cups fresh pineapple chunks
2 and 2/3 cup all-purpose flour
2 cups sugar
1 Tablespoon baking powder
1 teaspoon salt
2/3 cup vegetable oil
1 and 1/2 cups milk + 1 Tablespoon white vinegar
2 large eggs, lightly beaten
1 teaspoon pure vanilla extract
Directions:
Preheat oven to 350°F (175°C). Place butter in a 9×13 glass baking pan and melt in oven. Once melted, evenly sprinkle brown sugar over butter, followed by pineapple chunks.
In a mixing bowl, whisk together flour, sugar, baking powder, and salt. Add oil, milk-vinegar mixture, eggs, and vanilla. Mix on low for 30 seconds, then on high for 3 minutes.
Pour batter over pineapple in the baking pan. Bake for 55 to 65 minutes or until a toothpick comes out with moist crumbs.
Remove from oven, loosen sides with a knife, flip onto a platter, and let the caramelized sugar drizzle over the cake.
Serve warm, at room temperature, or cold with whipped cream and maraschino cherries.
