The Triple Crust Peach Cobbler is a heavenly dessert that layers sweetness and texture in every bite. It combines the comforting warmth of home-baked pie crusts with the juicy, zesty flavor of peaches, creating a symphony of taste and aroma. This classic dish is perfect for those who love to delve into the nostalgia of traditional baking while enjoying the rich, indulgent flavors of a well-crafted dessert.
Ingredients:
- 3 Packages (11 ounces each) Betty Crocker™️ pie crust mix
- 1 cup cold water
- 1 1/2 cups sugar
- 3/4 cup melted butter or ghee
- 2 teaspoons ground nutmeg
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 2 teaspoons lemon extract
- 2 cans (29 ounces each) chopped peaches in syrup, undrained
- Preheat the oven to 350°F (175°C).
- Mix one package of pie crust mixture with 1/3 cup cold water to form a ball. Flatten into an 11×8 inch rectangle and cut into 4 strips, 11×2 inches each. Bake strips on an ungreased cookie sheet for 17 minutes. Set aside.
- Mix another package of pie crust with 1/3 cup cold water. Form a ball and flatten to fit the bottom and sides of a 13x9x2 inch ungreased baking dish. Set aside.
- In a large bowl, mix sugar, nutmeg, butter, cinnamon, vanilla, lemon extract, and peaches. Pour half of this mixture into the prepared baking dish. Arrange the 4 baked pastry strips on top, then add the remaining peach mixture.
- Prepare the final pie crust layer as before and place over the peach mixture. Cut several holes in the crust.
- Bake for 60 minutes. Refrigerate covered.
