Ingredients:
- 2 lb chicken tenders or 4 large chicken breasts
- 2 sleeves Ritz crackers
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 cup whole milk (2% used)
- 3 cups cheddar cheese, grated
- 1 tsp dried parsley
- Sauce:
- 10oz can cream of chicken soup
- 2 Tbsp sour cream
- 2 Tbsp butter
- Preheat oven to 400°F (200°C). Crush crackers. Cut chicken breasts into 3 pieces if not using tenders.
- Pour milk, cheese, and cracker crumbs into separate pans. Mix salt and pepper with crumbs.
- Dip chicken in milk, then in cheese, pressing it in. Coat in cracker crumbs, pressing firmly.
- Place chicken in a 9×13 pan sprayed with cooking spray.
- Sprinkle with parsley, cover with foil, and bake for 35 minutes. Remove foil and bake for an additional 10-15 minutes until crispy.
- For the sauce, whisk together soup, sour cream, and butter in a saucepan over medium heat until hot. Serve over chicken.
