Ingredients:

  • 2 lb chicken tenders or 4 large chicken breasts
  • 2 sleeves Ritz crackers
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup whole milk (2% used)
  • 3 cups cheddar cheese, grated
  • 1 tsp dried parsley
  • Sauce:
    • 10oz can cream of chicken soup
    • 2 Tbsp sour cream
    • 2 Tbsp butter
Directions:
  1. Preheat oven to 400°F (200°C). Crush crackers. Cut chicken breasts into 3 pieces if not using tenders.
  2. Pour milk, cheese, and cracker crumbs into separate pans. Mix salt and pepper with crumbs.
  3. Dip chicken in milk, then in cheese, pressing it in. Coat in cracker crumbs, pressing firmly.
  4. Place chicken in a 9×13 pan sprayed with cooking spray.
  5. Sprinkle with parsley, cover with foil, and bake for 35 minutes. Remove foil and bake for an additional 10-15 minutes until crispy.
  6. For the sauce, whisk together soup, sour cream, and butter in a saucepan over medium heat until hot. Serve over chicken.
