This Jalapeno Popper Grilled Cheese combines the rich creaminess of melted cheese with a spicy kick from fresh and pickled jalapeños.   1. Ingredients:
  • 2 slices of sourdough bread
  • 2 tablespoons butter, softened
  • 2 oz cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 2-3 jalapeños, sliced and seeds removed (for less heat, remove the seeds)
  • 2 tablespoons pickled jalapeños (optional for extra flavor)
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Directions:

  1. Preheat a skillet over medium heat.
  2. In a small bowl, mix the cream cheese, cheddar cheese, mozzarella cheese, mayonnaise, garlic powder, salt, and pepper.
  3. Spread the cheese mixture evenly on one slice of sourdough bread.
  4. Add the sliced fresh jalapeños and pickled jalapeños (if using) on top of the cheese mixture.
  5. Place the second slice of bread on top and lightly butter the outside of both slices of bread.
  6. Place the sandwich in the preheated skillet and cook for about 3-4 minutes per side, or until golden brown and the cheese is melted.
  7. Remove from the skillet and let it cool slightly before slicing.
