This Garden Vegetable Lasagna is a vibrant and hearty dish that combines the flavors of fresh garden vegetables, savory tomato sauce, and creamy cheeses. With each layer offering a different texture and flavor, it’s a satisfying and nutritious meal for anyone craving a comforting, meatless dish.

  1. Ingredients:
  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/4 cup tomato paste
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 1/2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 egg

Directions:

  1. Preheat oven to 375°F (190°C). Cook the lasagna noodles according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté for 2-3 minutes, until softened.
  3. Add the zucchini, yellow squash, bell pepper, and mushrooms to the skillet. Cook for 5-7 minutes, until the vegetables are tender.
  4. Stir in the tomato sauce, diced tomatoes, tomato paste, basil, oregano, salt, and pepper. Simmer for 10 minutes to allow the flavors to meld.
  5. In a medium bowl, combine ricotta cheese, 1 cup of mozzarella, Parmesan, and egg. Mix well.
  6. Spread a thin layer of the vegetable mixture in the bottom of a 9×13-inch baking dish. Layer with three lasagna noodles, then spread half of the ricotta mixture over the noodles.
  7. Add another layer of vegetable sauce, followed by three more noodles. Spread the remaining ricotta mixture and top with the final three noodles.
  8. Pour the remaining vegetable sauce over the top and sprinkle with the remaining mozzarella cheese.
  9. Cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
  10. Let it cool for 5 minutes before slicing and serving.
