These Banana French Toast Roll-Ups are the perfect combination of crispy, golden toast and sweet banana filling. Lightly spiced with cinnamon and finished with a dusting of powdered sugar, they are a delightful twist on traditional French toast.
- Ingredients:
- 8 slices of white or wholemeal bread (crusts removed)
- 2 ripe bananas, mashed
- 1 teaspoon cinnamon
- 1 tablespoon sugar
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 tablespoon butter (for frying)
- Powdered sugar (for dusting)
- Maple syrup (for serving)
Directions:
- Flatten the bread slices with a rolling pin to make them easier to roll.
- In a small bowl, combine the mashed bananas, cinnamon, and sugar. Spread a generous tablespoon of the banana mixture evenly over each slice of bread.
- Roll up each slice of bread tightly to form a log.
- In a shallow dish, whisk together the eggs, milk, and vanilla extract until well combined.
- Heat butter in a large frying pan over medium heat. Dip each roll-up into the egg mixture, ensuring it is fully coated, then fry them in the pan for 2-3 minutes on each side, or until golden brown and crispy.
- Remove the roll-ups from the pan and place them on a plate lined with paper towels to drain any excess butter.
- Dust the roll-ups with powdered sugar and serve immediately with maple syrup.
