These Air Fryer Peanut Butter Cookies are the perfect balance of soft and crispy, with a rich peanut butter flavour in every bite. The air fryer ensures a golden, lightly crisp exterior while keeping the centre wonderfully soft and chewy.
- Ingredients:
- 1 cup peanut butter (smooth or crunchy)
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- Optional: 1/4 cup chocolate chips (for added indulgence)
Directions:
- Preheat your air fryer to 160°C (320°F).
- In a medium-sized mixing bowl, combine the peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and a pinch of salt. Mix until smooth and well combined. If you’re adding chocolate chips, fold them in at this stage.
- Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on a piece of parchment paper or a non-stick air fryer tray, making sure to leave space between each cookie.
- Gently press each cookie with a fork, creating a criss-cross pattern on top.
- Air fry the cookies at 160°C (320°F) for 6-8 minutes, or until they are golden brown around the edges and slightly firm to the touch.
- Allow the cookies to cool in the air fryer basket for a few minutes before transferring them to a cooling rack.
