These Air Fryer Peanut Butter Cookies are the perfect balance of soft and crispy, with a rich peanut butter flavour in every bite. The air fryer ensures a golden, lightly crisp exterior while keeping the centre wonderfully soft and chewy.

  1. Ingredients:
    • 1 cup peanut butter (smooth or crunchy)
    • 1/2 cup granulated sugar
    • 1/2 cup brown sugar, packed
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • Pinch of salt
    • Optional: 1/4 cup chocolate chips (for added indulgence)

Directions:

  1. Preheat your air fryer to 160°C (320°F).
  2. In a medium-sized mixing bowl, combine the peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and a pinch of salt. Mix until smooth and well combined. If you’re adding chocolate chips, fold them in at this stage.
  3. Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on a piece of parchment paper or a non-stick air fryer tray, making sure to leave space between each cookie.
  4. Gently press each cookie with a fork, creating a criss-cross pattern on top.
  5. Air fry the cookies at 160°C (320°F) for 6-8 minutes, or until they are golden brown around the edges and slightly firm to the touch.
  6. Allow the cookies to cool in the air fryer basket for a few minutes before transferring them to a cooling rack.
