Ingredients:

  • 2 large yellow onions
  • 8 oz mozzarella cheese (cut into thin sticks or string cheese)
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 ½ cups seasoned breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying

Directions:

  1. Peel onions and slice into 1/2-inch thick rings. Separate rings and match up pairs of similar size.
  2. Insert a piece of mozzarella cheese between two matching rings, pressing gently so the cheese is snug inside the ring “sandwich.” Repeat with all rings.
  3. Place flour in one bowl, eggs in a second, and breadcrumbs mixed with garlic powder, paprika, salt, and pepper in a third.
  4. Dip each cheese-stuffed onion ring in flour, then egg, then breadcrumbs. For extra crunch, repeat egg and breadcrumb coating once more.
  5. Freeze coated rings for 30–60 minutes to help the cheese stay intact while frying.
  6. Heat oil in a deep fryer or large skillet to 350°F (175°C).
  7. Fry the rings in batches for 2–3 minutes, until golden brown and crispy. Drain on paper towels.
  8. Serve hot with marinara, ranch, or your favorite dipping sauce.
