This Easy Cabbage Soup is a wholesome and satisfying dish that brings comfort and warmth to any meal. The vibrant cabbage, tender carrots, and hearty broth make this soup both delicious and nourishing. It’s the perfect choice for a light, healthy dinner or as a meal prep option for the week.

  1. Ingredients:
  • 1 medium head of green cabbage, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Fresh parsley or cilantro for garnish (optional)

Directions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing for about 3-4 minutes, or until softened.
  2. Add the chopped carrots and celery, and cook for another 5 minutes, stirring occasionally.
  3. Stir in the chopped cabbage and cook for 5-7 minutes, allowing it to wilt down slightly.
  4. Add the diced tomatoes, vegetable or chicken broth, bay leaf, thyme, salt, and pepper. Stir well to combine.
  5. Bring the soup to a simmer, then reduce the heat and cook for 30 minutes, or until the vegetables are tender.
  6. If you like a little spice, add red pepper flakes to taste.
  7. Remove the bay leaf, and garnish with fresh parsley or cilantro if desired. Serve hot and enjoy!
