  1. Ingredients:
  • 1 large egg
  • 2 cups chicken broth (or vegetable broth)
  • 1/2 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1/4 teaspoon ground white pepper (optional)
  • 1 tablespoon cornstarch (optional, for thicker soup)
  • 1 tablespoon water (if using cornstarch)
  • 1 spring onion, finely sliced (for garnish)
  • A few drops of hot sauce (optional)

Directions:

  1. In a small bowl, whisk the egg lightly. Set it aside.
  2. In a medium-sized saucepan, heat the chicken (or vegetable) broth over medium heat. Once the broth is warm, add the sesame oil, soy sauce, and white pepper, stirring to combine.
  3. If you prefer a thicker soup, mix the cornstarch with water in a separate bowl to create a slurry. Add this mixture to the broth and stir well. Allow it to simmer for a few minutes until the broth has thickened slightly.
  4. Bring the soup to a gentle simmer, then slowly pour the beaten egg into the broth while stirring gently in a circular motion. The egg should form delicate ribbons as it cooks.
  5. Continue stirring for another minute, allowing the egg to cook through. Taste and adjust seasoning with extra soy sauce or white pepper if needed.
  6. Remove from heat and ladle the soup into bowls.
