This Oven Baked Forgotten Chicken is a meal made for those busy nights when you just want something simple yet flavorful. The creamy ranch dressing mix and mayonnaise create a luscious coating on the chicken, making it tender, juicy, and full of flavor. Baking the chicken in the oven gives it a golden brown exterior while keeping the inside moist.
Ingredients:
- 4 bone-in chicken thighs (or breasts)
- 1 packet ranch dressing mix (dry)
- 1 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Directions:
- Preheat your oven to 350°F (175°C). Grease a baking dish with a little olive oil.
- In a medium bowl, combine the ranch dressing mix, mayonnaise, Dijon mustard, garlic powder, paprika, salt, and black pepper. Stir until smooth and well combined.
- Place the chicken thighs into the prepared baking dish. Drizzle with olive oil.
- Spread the creamy ranch mixture evenly over the chicken, covering each piece.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- After 45 minutes, remove the foil and continue baking for another 15-20 minutes, or until the chicken is golden brown and fully cooked through (internal temperature should reach 165°F).
- Let the chicken rest for 5-10 minutes before serving.
