This Oven Baked Forgotten Chicken is a meal made for those busy nights when you just want something simple yet flavorful. The creamy ranch dressing mix and mayonnaise create a luscious coating on the chicken, making it tender, juicy, and full of flavor. Baking the chicken in the oven gives it a golden brown exterior while keeping the inside moist.

Ingredients:

  • 4 bone-in chicken thighs (or breasts)
  • 1 packet ranch dressing mix (dry)
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Directions:

  1. Preheat your oven to 350°F (175°C). Grease a baking dish with a little olive oil.
  2. In a medium bowl, combine the ranch dressing mix, mayonnaise, Dijon mustard, garlic powder, paprika, salt, and black pepper. Stir until smooth and well combined.
  3. Place the chicken thighs into the prepared baking dish. Drizzle with olive oil.
  4. Spread the creamy ranch mixture evenly over the chicken, covering each piece.
  5. Cover the baking dish with aluminum foil and bake for 45 minutes.
  6. After 45 minutes, remove the foil and continue baking for another 15-20 minutes, or until the chicken is golden brown and fully cooked through (internal temperature should reach 165°F).
  7. Let the chicken rest for 5-10 minutes before serving.
