  1. Ingredients:
  • 1 box yellow cake mix
  • 1 can (20 oz) crushed pineapple, undrained
  • 1/4 cup butter, melted
  • 2 eggs
  • 1/2 cup shredded coconut (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the cake mix, crushed pineapple (with juice), melted butter, and eggs. Stir until fully combined.
  3. Fold in shredded coconut and chopped nuts, if using.
  4. Pour the batter into the prepared baking dish and spread evenly.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake bars are baking, prepare the glaze by mixing powdered sugar, milk, and vanilla extract in a small bowl.
  7. Once the cake is done, remove from the oven and let it cool for 10 minutes. Drizzle the glaze over the top while still warm.
  8. Allow the bars to cool completely before cutting into squares.
